Sweet Potato Breakfast Bars

 

One of my Facebook friends just sent me this recipe. After she was raving about it online, I just had to get it for everyone to enjoy. A sweet potato is a veggie, right? So these are good for us, right?

Ingredients

5 sweet potatoes
1/4 cup sugar
2 T cinnamon
2 T canola oil
2/3 c maple syrup
3/4 c orange juice
4 c quick cooking oats (I love the steel cut kind, but any works!)

Wash and scrub sweet potatoes, pierce with fork, microwave until soft (about 8 mins, maybe a lot more depending on your microwave)

Heat oven to 400

Cut potatoes lengthwise, scoop out flesh, place in large bowl

Add sugar, cinnamon, oil, maple syrup and orange juice

Stir in oats and mix well

Lightly grease a 9x13 inch baking pan

Bake 23 minutes

Let cool 10 mins

Cut into squares. Serve immediately or store for 3 days in airtight container.
